Baked Onion Rings These baked onion rings are tasty, satisfying and not fried. Ingredients: 1 large onion 1 egg beaten 1/2 cup crushed Fiber One cereal Directions: Preheat oven to 375 degrees. Cut onion into slices about 1/2 inch thick and separate into rings. Beat a large egg in a small bowl. Using a blender or food processor, grind cereal and pour into a bowl. One by one, coat each ring in egg and then dip into the crumbs (shake off extra crumbs) Place the onion rings on a cookie sheet sprayed with olive oil cooking spray for about 20-25 minutes. Halfway through turn rings over.
